Cheesy Jalapeno Squash

My husband and I love this squash with a little kick.  This dish makes a great side to anything you want to grill.

2 Tbsp butter

1 medium onion, sliced

4 cloves garlic, minced

1 large jalapeno, seeded and diced

1 yellow squash

1 zucchini

1 cup shredded cheese

Melt butter and saute onion, garlic.

Add diced jalapeno.

Slice squash and zucchini in half lengthwise and then slice into pan.  Season with salt & pepper and stir.

Cover and cook on medium heat 10-15 minutes, stirring occasionally.

Sprinkle with cheese, cover and cook an additional 5 minutes to melt cheese.
