Cowboy Crock Pot Breakfast

I came up with this crock pot breakfast after seeing several different recipes.  It is great for busy mornings or when you have a few extra mouths to feed at the breakfast table.  It is kind of like an omelet and you can fill it up however you want.

2 lb sausage

2 cups shredded cheese

30 oz pkg. frozen hash browns

18 eggs

3/4 cup milk

1 tsp salt

pepper to taste

Optional Ingredients: minced garlic, 2 diced & seeded jalapenos, 1/2 cup chopped onion, 1/2 cup seeded diced tomato, 1/2 cup diced bell pepper

Brown & drain sausage.
Spray crock pot with no stick spray and cover the bottom with a layer of half of the hash browns.
Add a  layer with half of sausage and 1 cup of cheese.  Repeat the layers with remaining hash browns, sausage, cheese.
Beat together egg, milk, salt & pepper.
Pour egg mixture over the top.
Set crock pot on low and cook 6-8 hours.
