Garlic Three Cheese Mashed Potatoes
My rural man is not your typical mashed potato kind of country guy, so I am always finding ways to give traditional food a little kick. I like to post pictures with my recipes, but this one I made last night to go with our pork roast and before I knew it they were almost gone. These delicious potatoes were quick and hassle free.
Here is the recipe and you can adjust the amounts according to how many people you are serving. My dad’s wife always says one potato per person and one for the pot so that is usually my rule of thumb.
7-8 medium potatoes, peeled and diced
4 cloves garlic, peeled and cut in half
2 Tbsp
1/4 C. half and half or milk
3 oz cream cheese
1/4 C. monterey jack shredded cheese
1/4 C. grated Parmesan cheese
salt & pepper to taste
In a heavy pot cover potatoes and garlic with water, cover and bring to a boil. Let potatoes cook until they are soft but not mushy. Drain water and combine remaining ingredients. Mix well.
