Jacked Up Potatoes
4-6 medium red potatoes boiled or baked until fork tender
1 C. grated pepper jack cheese
1 C. mayonnaise
2-4 cloves minced garlic
2 Tbsp chopped chives
salt & pepper to taste
Cut the cooked potatoes in half and scoop out some of the potato into a bowl.
Combine all of the remaining ingredients with theĀ potatoes.
Fill the potatoes with the mixture and bake at ~350 for 15-20 minutes
